The portion maths
With a crowd, a separate plate for everyone arrives late and costs more. That is why sharing platters are written in portion multiples: 1.5 portions suits two people, 2.5 suits three, 3.5 suits four or five.
A practical measure: instead of ordering an extra portion per head, add lahmacun and rice to the platter. It balances the table and lowers the bill.
The order to order in
For the table to flow, sequence matters:
- Soup and starters first — the table is not empty while the grill heats.
- Then lahmacun — out in a minute, it ends the sense of waiting.
- The main last — the platter to the middle, arriving hot.
- Dessert ordered separately; künefe is the one thing that has to arrive hot, so do not order it in advance.
